Lemon-Herb Chicken Bowl with Chickpeas & Feta
  1. In a bowl combine:

    Olive oil

    Lemon juice

    Garlic

    Oregano

    Paprika

    Cumin

    Salt and pepper

  2. Add chicken and marinate for at least 20 minutes.

  3. Cook the chicken

    Heat a skillet or grill pan over medium heat.

    Cook chicken for 5–7 minutes per side until golden and fully cooked.

    Rest for 5 minutes, then slice.

  4. Make the dressing

    Whisk together:

    Olive oil

    Lemon juice

    Honey

    Herbs

    Salt and pepper

  5. Assemble the bowls

    Divide rice or quinoa between bowls.

    Top with:

    Chickpeas

    Cucumber

    Tomatoes

    Onion

    Avocado

    Sliced chicken

    Feta cheese

  6. Finish

Drizzle with lemon-herb dressing.

Garnish with extra herbs and serve.
