Burrito Loaded Sweet Potato Skins
  1. Preheat oven to 180C and line a baking tray with parchment paper

  2. Cut sweet potatoes in half lengthwise and poke a few holes using a fork

  3. Drizzle with oil and season to taste

  4. Bake in the oven for 30-35 minutes or until soft

  5. Heat oil in a frying pan and add onions

  6. Cook onions for 5 minutes

  7. Add capsicum, tomatoes, beans, tomato sauce and spices to the pan

  8. Mix to combine and cook for 10 minutes

  9. Take potatoes out from the oven and let cool down

  10. Scoop out the flesh and mix with tomato mixture

  11. Spoon the filling back into the potato skins and sprinkle with cheese

  12. Return to the oven for another 10 minutes or until the cheese has melted

  13. Serve topped with guacamole, Greek yogurt and garnished with coriander
