Homemade Sopapillas
  1. Whisk flour, baking powder, sugar, and salt together. Cut in the shortening and combine thoroughly.

  2. Add water and stir until the dough starts to come together.

  3. Sprinkle a bit of extra flour on a countertop and turn the dough out onto it.

  4. Knead it for about 5 minutes, adding a sprinkle of flour if it becomes sticky.

  5. Place the dough back in the mixing bowl, cover with a towel and let it rest for 10 minutes.

  6. Meanwhile, heat oil to 350°F in a deep-frying pan over medium heat.

  7. While the oil is heating, roll the dough out to between ⅛" to ¼" thickness

  8. Using a pizza cutter, cut the dough into 16-20 equal pieces.

  9. Carefully drop 4-5 pieces into the hot oil and fry for 2-3 minutes on each side or until both sides have puffed up and turned a golden.

  10. Remove from the oil and drain them over a cookie cooling rack or a plate with a paper towel.

  11. Once cooled, sprinkle them with a bit of powdered sugar and serve with honey for drizzling.
