Add 2 chicken breasts to a bowl, drizzle with 1 tbsp Chosen Foods Avocado Oil and season with salt, pepper, oregano, garlic powder, and smoked paprika.
Bring a pan to medium heat, add 1 tbsp Chosen Foods Avocado Oil, and place the marinated chicken in the pan. Cover and cook for 3 minutes to trap the moisture.
Flip the chicken, cover, reduce heat to medium-low, and cook for another 8 minutes, or until the internal temperature reaches 165°F.
Remove the chicken from the pan, let it rest for 4-5 minutes, then add it to a cutting board with fresh basil, chives, sun-dried tomatoes, black olives, fresh mozzarella balls, and half an avocado.
Add 2 tsp Chosen Foods Avocado Mayo and chop everything together.
Serve the chopped Mediterranean chicken salad in low-carb pitas or on romaine lettuce leaves, with additional fresh herbs, greens, and avocado slices.
