Add flour and salt to a large bowl and stir together. Set aside.
Use a box grater to grate the butter, then add it to the flour.
Stir it all together and use a fork to work the butter into the flour a bit.
Add 4 tablespoons of the ice water.
Continue using the fork to work the flour into the butter and water until crumbs begin to form larger clusters.
Use your hands a little bit to help it all come together, being careful not to use your hands too much as warmth will melt the butter.
If the dough falls apart, add 1-2 more tablespoons of water (1 tablespoon at a time) and continue to work until dough comes together.
Work just enough for it to come together and form a ball.
Cut the ball in half and shape each into a disc.
Wrap each disc in plastic wrap and refrigerate for at least an hour or up to 2 days before rolling and baking.
