In a shallow bowl, mix the flour with salt, pepper, garlic powder, and onion powder.
In another bowl, whisk together the eggs, Dijon mustard, and honey until well combined.
Place the pretzel crumbs in a third bowl.
Dip each chicken breast first in the flour mixture, then in the egg mixture, and finally coat with the pretzel crumbs, pressing down to adhere.
Place the coated chicken breasts on the prepared baking sheet. Lightly spray with cooking spray or drizzle with oil for extra crispiness.
Bake for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown.
In the last 5 minutes of baking, sprinkle shredded cheddar cheese on top of each chicken breast and return to the oven until melted.
