Simmer 1 cup sliced strawberries, 3 stalks diced rhubarb, ½ cup monk fruit sweetener, and ½ cup water over medium heat until the fruit softens and the syrup thickens.
Strain out the fruit (save it for yogurt or toast!) and chill your syrup.
Pour 1 oz syrup and 1 oz vodka over ice, top with soda water, and garnish with fresh strawberries or rhubarb ribbons.
