Kerala-style Sea Bass
  1. Make the tadka - Heat coconut oil in a pan over medium heat. Add cumin seeds and coriander seeds—let them sizzle for a few seconds. Add scallion whites, curry leaves, and green chili. Sauté until fragrant and slightly softened (2–3 minutes). Remove from heat and let it cool completely.

  2. Blend the sauce - add all ingredients of the sauce to a food processor and blend till well mixed - it doesn’t need to be smooth, the seeds add a nice crunch to the dish. Taste and adjust salt.

  3. Preheat oven to 375°F (190°C). Place fish fillets in an oiled baking dish and pour the sauce generously over the fish.

  4. Bake for 12–18 minutes, until the fish is cooked through and flakes easily.

  5. Serve over hot rice with chili oil for some added pizzazz
