Step 1: Marinate the Chicken - In a medium-sized bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to create the marinade. Place the chicken chunks into the bowl and mix thoroughly to ensure each piece is well coated. Cover the bowl and put it in the fridge to allow the chicken to marinate.
Step 2: Prepare the Homemade Tzatziki Sauce - Grate the cucumber using the coarse side of a box grater. Transfer the grated cucumber into a clean tea towel or several sheets of kitchen paper. Squeeze it firmly over a sink to press out as much liquid as you can. In another bowl, mix the drained cucumber with the Greek yoghurt, chopped dill, mint (if you’re using it), lemon juice, grated garlic, olive oil, and a pinch of salt. Stir until everything is well incorporated. Cover and place in the fridge to let the flavours develop.
Step 3: Cook the Chicken - Warm up a large frying pan or griddle pan over a medium-high heat. Gently place the marinated chicken into the hot pan, arranging it in a single layer. Cook for about 5-7 minutes, turning the pieces now and then, until the chicken is a lovely golden brown colour and cooked all the way through. Take the chicken out of the pan and allow it to rest for a couple of minutes before you serve it.
Step 4: Assemble Your Refreshing Chicken Tzatziki Bowls - Begin by sharing your chosen grain (quinoa, rice, etc.) between two bowls to form the base. Neatly arrange the cooked chicken, halved cherry tomatoes, sliced red onion, and Kalamata olives on top of the grains. Add a generous spoonful of the homemade tzatziki sauce over the chicken pieces. Finish with a sprinkle of crumbled feta cheese and a little extra fresh dill or parsley for garnish. Serve straight away with a fresh lemon wedge on the side.
