Mixed Vegetable Curry
  1. Heat oil and sauté all vegetables on a medium to low flame till they are about ¾ cooked.

  2. Do not add salt at this stage. Add peas towards the end and cook covered.

  3. In another pan, heat oil and add cinnamon, cardamom, cloves, shah jeera and bay leaves.

  4. Add onions and sauté till golden brown. Add a little salt to speed up the process.

  5. Add ginger and garlic paste. Add water, turmeric, red chilli powder and coriander powder. Mix well.

  6. Lower the flame and add yogurt. Cook slowly till the oil separates.

  7. Add the sautéed vegetables and mix gently. Cover and cook for 5 minutes.

  8. Finish with garam masala, lime juice and fresh coriander. Mix gently and switch off the flame.
