Cherry & Ricotta Cake

Makes 1 x 8 inch cake

  1. Preheat oven to 160 fan/180 oven.

  2. Beat butter and sugar together with orange zest & amaretto/ almond extract

  3. add eggs, beat. Add flour baking powder and salt. Beat again

  4. Gently strain ricotta and gently gently stir in. Pour batter into an 8-inch cake tin.

  5. Toss cherries in flour, top the cake

  6. Bake for about 1hr10, or until a skewer inserted comes out clean. When it's more than half way done, sprinkle the top with a bit of demerrera sugar and put back in the oven.
