  1. Mince the onion, garlic and roughly chop the parsley.

  2. Mix all the ingredients together in a bowl and mix by hand

  3. Slice the pitas in half and stuff them with the mixture.

  4. Grill on all sides until cooked through

  11. Let rise for another 15-30 minutes. before rolling out.

  12. Bake in the oven or BBQ at 200-240 degrees Celsius, on a piping hot pizza stone or baking tray. Flip a few times, to make them puff better.
