Meal Prep Quesadillas
  1. Preheat oven to 425

  2. I had chicken pre cooked (grilled)

  3. Chop peppers, onion, and chicken

  4. Cook peppers and onion in a pan

  5. Add one cup of black beans

  6. Once everything's cooked add taco seasoning and Greek yogurt

  7. If tracking macros, you separate your chicken into 8 sections of 2.5 oz for easier tracking/accuracy

  8. Spray sheet pan and lay out your tortillas

  9. Add the filling from the pan into the tortillas

  10. Add your chicken

  11. Add cheese, esp around outer edge to keep closed

  12. Close and bake for ~10 mins

  13. Take them out and eat one while the others cool (65 then you can put in the freezer. I set the whole tray in the freezer for a bit before bagging all together.

  14. REHEATING: I just microwave for 2.5 mins but I have an old, slow microwave. I have found that if they were crispy when you took them out of the oven and you let them cool before bagging, they will stay pretty crispy!
