If your tofu skin is dried, soak it beforehand to rehydrate.
Wrap a bunch of enoki in each tofu skin and tie the bundle up with the chives.
Mix the sauce ingredients together
Heat a small amount of oil in a non-stick pan over medium heat and place your enoki bundles in the pan to sear for about a minute.
Pour the sauce over the bundles and cover the pan with a lid. Leave for 3-5 minutes.
The sauce will be slightly thickened and the mushrooms and tofu skin will be softened.
Serve hot!
