Enoki In Tofu Skin (金针菇豆皮卷)
  1. If your tofu skin is dried, soak it beforehand to rehydrate.

  2. Wrap a bunch of enoki in each tofu skin and tie the bundle up with the chives.

  3. Mix the sauce ingredients together

  4. Heat a small amount of oil in a non-stick pan over medium heat and place your enoki bundles in the pan to sear for about a minute.

  5. Pour the sauce over the bundles and cover the pan with a lid. Leave for 3-5 minutes.

  6. The sauce will be slightly thickened and the mushrooms and tofu skin will be softened.

  7. Serve hot!
