Preheat oven to 425oF. Prepare a baking sheet with a piece of parchment paper.
In a small bowl, mix all the spices and salt for the steak.
Generously coat steak with spice mix.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Sear steak, no more than 3 minutes per side.
The steak will cook longer in the oven, so make sure it’s just a sear!
Remove from heat and let rest for 5 minutes while you prepare the quesadillas.
Place 2 tortillas on the prepared sheet and sprinkle each with ½ cup cheese.
Top with tomatoes, corn, black beans, and avocado.
Slice steak thinly against the grain.
Arrange slices on top of loaded tortillas.
Sprinkle the rest of the cheese evenly over both quesadillas and top with the remaining tortillas.
Bake in the oven for 6-8 minutes, until the cheese is melted and the tortillas are heated through.
Remove from oven and cut as desired.
