Crispy Roasted Potatoes With Cowboy Butter
  1. Peel the potatoes and cut each one in half and then into big bite sized chunks

  2. Heat up a pot of water adding the baking soda and a pinch of salt, followed by the potatoes

  3. Boil until just fork tender, then drain and swirl around in the colander to rough them up

  4. Let potatoes sit for at least 20 minutes to dry out

  5. Add the tallow or oil to a baking dish and place in a cold oven

  6. Preheat oven to 425F degrees and leave the baking dish in for an extra 10 minutes

  7. Pull out the dish and place the potatoes in

  8. Cook for about an hour, pulling out every 10 minutes to flip and toss

  9. While the potatoes cook, add the cowboy butter ingredients to a pan over medium low heat and blend until smooth

  10. Set the potatoes on a paper towel to drain

  11. Add the potatoes to a bowl with cowboy butter and toss

  12. Serve immediately
