Avocado Chia Pudding
  1. Cut the avocado in half and discard the seed, then scoop the avocado into a blender or deep bowl (if using an immersion blender like I did)

  2. Then add in the almond milk, maple syrup, vanilla extract, and almond extract and blend until avocado is broken down and the mixture is smooth.

  3. Add in a pinch of salt and then add in the chia seeds and, using a spatula, stir well so chia seeds are evenly distributed.

  4. Cut the lemon into half and squeeze in a teaspoon or so of lemon juice into the breakfast pudding.

  5. Then mix well, cover, and chill for at least 2 hours so chia seeds absorb the liquid.

  6. Enjoy plain or topped with your favorite fruit!
