Keto Yeast Bread
  1. Add the dry ingredients (oat fiber, flaxseed meal, vital wheat gluten, salt, sweetener, xanthan gum) to a mixing bowl and mix well.

  2. In a separate bowl, combine the warm water, instant yeast, and honey. Stir to dissolve the yeast and honey.

  3. Add the yeast mixture, beaten eggs, and softened butter to the dry ingredients in the stand mixer. Mix on medium speed for about 7 minutes, stopping to scrape down the sides as needed.

  4. Grease a bread pan and transfer the dough to it. Cover loosely with greased plastic wrap.

  5. Place the bread pan in the microwave along with a cup of hot water. Replace the hot water every 10-15 minutes to maintain a warm, humid environment.

  6. Allow the dough to rise for about 2 hours, until it has doubled in size.

  7. Preheat the oven to 375°F (190°C).

  8. Bake the bread for 25 minutes, until golden brown.

  9. Remove the bread from the oven and allow it to cool before slicing.
