Mix almond flour, salt, and shredded mozzarella cheese in a microwave-safe bowl.
Microwave on high for 1 to 2 minutes.
Remove from the microwave and form the dough with a spoon, spatula, or with your hands.
Add egg and knead the dough until the egg is completely combined with the dough.
Place the dough on parchment paper and roll it very thin. As thinner as possible. PRO TIP: If the dough is sticky, take 1 teaspoon of olive oil and distribute it on top of the dough and roll or roll between 2 parchment papers.
Cut the dough with a pizza cutter or with a knife into triangles or shapes you like.
Place chips on a parchment paper with space between the peaces. Bake in a preheated oven for 10 - 20 min on 190 C or 375 F or until golden brown.
When chips are baked, leave them to cool completely to crisp up.
