slow cook onions and garlic in butter, add in broth, and au jus ingredients. cook on low simmer.
Place all Au Jus ingredients in the large saucepan. Bring to a boil over moderate heat, then lower the heat, simmer for 10 minutes. remove celery from soup
Put the thin sliced steak into the Au Jus to just cook.
Arrange the meat on the rolls and top each roll with a slice of Swiss cheese. (smoked gouda?)
Bake the sandwiches in the preheated oven for 3-5 minutes or until the cheese is melted. Serve with Au Jus.
