Miso Butterbeans With Soy Mushrooms
  1. Tear the mushrooms roughly and douse in soya sauce, roast until very crispy.

  2. Saute onion and garlic in a pan until caramelised, add to a food processor with drained beans, miso paste and milk.

  3. Blitz until very smooth.

  4. Spread on a plate, top with mushrooms, chilli oil, chives and spring onions.
