Quick Fruit Scones
  1. Mix flour, bicarbonate, CoT and salt, then add cubed cold butter, rub in to the dry ingredients until it looks like breadcrumbs.

  2. Stir through the sugar then the fruit, then add your milk in one fell swoop.

  3. Give it a quick stir then tip onto a floured surface and gently knead till it forms a rough dough.

  4. Gently press into a rectangle or a round and cut into 6 pieces.

  5. Space out on a baking tray and brush with beaten egg.

  6. Into a preheated oven at 220c Fan forced for 10 minutes.

  7. Rest on a wire rack for 5 minutes and eat when still warm with jam and cream.
