Coconut Chia Pudding
  1. In a bowl, add ½ cup coconut milk, ½ cup Greek yogurt, 1 tablespoon honey, and 1 teaspoon vanilla extract. Whisk until smooth and creamy.

  2. Add 2 tablespoons chia seeds and whisk well so there are no lumps.

  3. Cover the bowl (or pour into jars) and place in the fridge. Let it chill overnight so it thickens.

  4. The next day, stir the pudding. If it’s too thick, add a little milk and mix again. Add toppings if you like, then enjoy!
