Italian-Herbed Chicken Meatballs in Broth
  1. Preheat the oven to 400°F.

  2. Line a large, rimmed baking sheet with parchment paper lightly coated with oil.

  3. In a large bowl, combine the chicken, rice, basil, cheese, Garlic Oil, egg, salt, and pepper, and mix well. Form the mixture into 1-inch balls and arrange them on the prepared baking sheet. Bake in the preheated oven for about 25 minutes, until the meatballs are browned and cooked through.

  4. Meanwhile, make the broth. Heat the olive oil and garlic oil in a stockist over medium-high heat. Add the carrots and cook, stirring, for 3 minutes, then add the broth and bring to a boil. Reduce heat to low and simmer, uncovered, foe about 10 minutes, until the carrots are tender. Stir in the spinach and basil.

  5. To serve, ladle hot broth over meatballs.
