Add the whites of 2 spring onions, 1 heaped tsp miso, 1 tbsp soy sauce, 1 tsp mirin, ½ tsp golden caster sugar and 1 tsp sesame oil to a bowl
Pour over chicken or vegetable stock
Mix with chop sticks until lump free
Add in noodles
Top with fried shiitake mushrooms, the greens of spring onion, a six minute egg, fresh coriander, chilli oil, shichimi and sesame seeds
