Chopped Egg Salad
  1. Slice into a medium sized avocado, scoop out the pit and add the avocado.

  2. Make 4 medium boiled eggs, peel and cut in half, then add to the board.

  3. Toss in the sliced dill pickles, chopped shallot or red onion, mustard, cottage cheese, fresh dill, cilantro, mayonnaise, salt and pepper.

  4. Chop everything up with a knife. If you want it creamier, keep chopping, but if you like it chunkier, don't chop too much to keep some texture.

  5. Taste and adjust seasoning as needed. You can also add spices, everything bagel seasoning, or chili crisp if desired.

  6. Serve the chopped egg salad on your favorite serving vessel and top with everything bagel and chile lime seasoning.
