Heat the broiler with a rack about 4 inches from the element.
Line a rimmed baking sheet with foil and place the pineapple rings in a single layer on it.
Broil until deeply browned, 8 to 10 minutes, rotating halfway through.
Meanwhile, in a small bowl, mix the honey, ginger, nutmeg and pepper flakes.
When the pineapple is done, transfer to individual plates.
Top with ice cream, then drizzle with the honey.
