Combine flour, yeast, and sugar in a large bowl. Add salt, whisk again, then mix in warm water and olive oil. Knead until dough is smooth and elastic, 5-7 minutes. Let it rise in a greased bowl, covered, for 1 hour.
Mix together butter, parsley, garlic, herbs, and Parmesan for the filling.
Preheat oven to 350°F (175°C). Grease a 9"×9" pan. Divide dough into 9 pieces, roll each into an 8-inch oval, spread with filling, and twist into knots. Place in the pan.
Cover and let rise for 30 minutes. Brush with melted butter, then bake for 25-30 minutes, until golden brown.
Brush with more melted butter or leftover roasted garlic oil.
