Easy Cajun Rice
  1. Heat oil in a medium non-stick pan over medium-high heat. Add the pepper and garlic; saute for about 3 to 5 minutes or until peppers soften slightly.

  2. Stir in tomato paste and allow it to warm through stirring constantly; about 2 minutes.

  3. Stir in the rice, cajun seasoning, and lemon juice. Stir until heat until the rice is warm.

  4. Add scallions and toss well to combine. Serve immediately.
