To a pan add a drizzle olive oil & the sausages then brown off on a medium heat for 5 mins.
Slice each sausage in to 6 then add the bacon & onion. Cook off for another 5 mins then add the peppers & garlic cooking for another few mins.
Add the bbq seasoning, onion powder, parsley salt, pepper, chopped tomatoes, stock pot, bbq sauce & rice then stir well.
Bring to a simmer on a medium heat then reduce down to low & cook for 15 mins until the rice is cooked through.
Top with the cheese then place under the grill until browned & melted.
Add the optional garnish if using then serve!
