Finely mince as much garlic as you can handle. Boil your noodles one minute before al dente and reserve some of the noodle water.
Melt butter in a pan, then add the garlic and stir constantly for about 2 minutes until fragrant and golden.
Add dark soy sauce, light soy sauce, oyster sauce, fish sauce, sugar, and parmesan. Stir for another minute until the sauce comes together.
Toss in your noodles along with a splash of noodle water, stirring until the sauce coats every strand evenly.
Serve the noodles in a bowl and optionally garnish with black pepper and scallions.
