Mexican Corn Salad
  1. Heat a large skillet or cast iron pan over medium-high heat. Add butter, olive oil, then corn. Let it cook for 2–3 minutes so it chars.

  2. Stir and continue cooking until golden and a little smoky. Season with salt, chili powder and paprika.

  3. In a large bowl, add the corn, red onion, jalapeño, cilantro, sour cream, mayo, cotija cheese, Parmesan cheese, lime juice, salt and pepper.

  4. Taste and adjust seasonings as needed. Add tajín to taste and enjoy.
