Pink Lemonade Cupcakes
  1. Preheat oven to 350 F and line pans with cupcake liners.

  2. Sift cake mix into small bowl; set aside.

  3. In large bowl, combine egg whites, oil, milk, yogurt, lemon juice, and lemon zest until smooth.

  4. Add cake mix; stir to combine well.

  5. Fill cupcake liners ¾ full and bake for 17-22 minutes or until knife inserted near center comes out clean.

  6. For Buttercream, beat butter for 2 minutes.

  7. Add vanilla extract.

  8. Slowly add powdered sugar until buttercream consistency is slightly thicker than desired.

  9. Slowly stir in strawberry puree.

  10. Add only as much puree as needed to get the right consistency.

  11. If buttercream becomes too thin, add more powdered sugar.

  12. Pipe buttercream onto cooled cupcakes and decorate with straws.
