Use a citrus juicer to squeeze the clementines to get ½ cup juice. Add the juice, oats, salt, and vanilla to a bowl or wide-mouth mason jar. Stir well (or shake with the lid on). Cover and refrigerate overnight.
In the morning, stir the oats and transfer to a wide bowl. Add your favorite toppings (or the ones suggested above) and gently mix to combine.
