Place the meat on a plate and sprinkle with salt on both sides. Do not rub the salt in or it will be too salty.
Heat a cast iron grill pan over high heat until very hot. Sear the steak on the grill pan for about 3 minutes per side, until medium rare.
Remove the steak from the grill pan, shaking off the excess salt, and place on a warm plate. Cover and let rest for about 10 minutes.
Slice the steak in two across the thickness, in order to create two large thin slices, then cut the thinner slices into three long strips each.
Slice the pickles in half lengthwise, and slice the tomatoes into four.
Spread a tablespoon (15 ml) of Keto Paleo mayo on each strip of steak, then place a pickle half and two or three pieces of tomato on it. Roll up and secure with a toothpick.
