Preheat oven to 190°C (375°F). Lightly grease a baking dish.
Heat 1 tbsp olive oil in a pan. Season chicken with salt, pepper, and paprika. Sauté until lightly golden (not fully cooked). Transfer to baking dish.
In the same pan, add remaining oil. Cook mushrooms until browned. Add garlic and spinach; cook until spinach wilts.
Lower heat. Stir in cream cheese and heavy cream until smooth. Add Italian seasoning and adjust seasoning.
Pour sauce and veggies over chicken. Sprinkle mozzarella and Parmesan on top. Bake 25–30 minutes until bubbly and golden.
