Scotcheroo Inspired Cookies
  1. Preheat oven to 375°F

  2. Cube cold butter and add to your stand mixer. Mix on low for 10-20 seconds to rough up the edges.

  3. Add sugar and mix 1-3 min until little to no butter chunks remain.

  4. Add vanilla, then peanut butter, then eggs.

  5. Add dry ingredients and mix until just combined.

  6. Portion cookies into 4oz domes. And spread out evenly on a baking sheet.

  7. Bake 14-16 min

  8. While cookies are setting up, melt your butterscotch chips & chocolate chips together. I did this in 30 second intervals in the microwave. I added the coconut oil to give a thinner consistency.

  9. Top each cookie with approx 1 T melted chips and top with rice cereal. Enjoy right away, or allow chocolate to harden for more of the scotcheroo feel!
