Combine all ingredients (except dark chocolate) in a Blender and blend on high until smooth and well combined. You might need to pause once and scrape down the sides.
Pour into small bowls.
Meanwhile, melt dark chocolate either in microwave in 30 second increments or using double boiler method. Pour on top of pudding and store in the refrigerator for a few hours or overnight.
Remove and serve cold!
You can add fruit too! Raspberries are an amazing add on.
