Preheat oven to 350.
Line a baking sheet with parchment paper.
Add peanut butter, sugar and brown sugar to a large mixing bowl. Mix with a handheld mixer until combined.
Add flax eggs, pumpkin and vanilla and mix again.
In a separate bowl, stir gluten-free oats, pie spices, almond flour and baking soda together.
Add dry ingredients to the large mixing bowl and stir until combined.
Add chocolate chips and mix again.
Scoop and roll cookie dough into balls and place on prepared baking sheet, leaving a few inches in between each cookie.
Bake for 13 minutes.
Remove from oven and immediately sprinkle with flaky salt.
You can use the bottom of a glass to gently press down the top of each cookie slightly if you like a flatter cookie.
Let cool and enjoy.
