Chicken cooked in an aromatic tomato sauce paired with a spiral pasta . The perfect Greek comfort food π¬π· Hereβs how you can make this β¬οΈ
Ingredients
1b Pasta Casarecce
5 chicken legs bone in skin on
1 white onion chopped
3 garlic cloves chopped
cups water
15oz tomato sauce
1 bay leaf
1 cinnamon stick
Β½ teaspoon Salt
Β½ teaspoon black Pepper
ΒΌ teaspoon ground Cumin
ΒΌ teaspoon ground Coriander
1 tablespoon of harissa sauce (mild)
Dry Myzithra cheese for garnish
Preparation
In a medium pot of water, add 1 tablespoon salt and once boiling add in your pasta,cook until al dente. Set aside and add 1 teaspoon olive oil to prevent sticking.
In a medium braiser, such as Le Creuset add in 2 tablespoons of olive oil. Once hot, add your chicken legs and sautΓ© on both sides for a few minutes. Now remove the chicken legs into a bowl set aside for now. Add in your chopped onions and garlic and sautΓ© for a few minutes until translucent. Then pour the tomato sauce in and water. Add the bay leaf and cinnamon stick into your sauce along with all the spices, salt and pepper and harissa sauce. Add back in the semi cooked chicken legs along with the juices. Simmer on low for 30-35 minutes covered on the stovetop, during that time turn the legs over once or twice to cook evenly.
In a plate, add the pasta then add the chicken and a bit of sauce along with dry Myzithra. Toast a few slices of sourdough bread and eat up!
