Time: 30 minutes
Recipe:
In a skillet over medium heat, sear leeks in oil until charred. About 5 minutes. Flip and cook another 3 minutes.
Push leeks to one side of pan and add in garlic, ginger and chiles. Cook until softened, about 2 minutes.
Add in fermented chili paste and cook until aromatic, about 2 minutes.
Deglaze with shaoxing wine. Be sure to scrape bottom of pan to get all the good stuff.
Add in dried shittake mushrooms, fish sauce, soy sauce and chicken stock.
Bring to a simmer and cook until leeks are fully cooked. About 6 minutes.
Add in fish and simmer until cooked through. About 3-5 minutes.
Meanwhile, in a separate small pan heat up the 3 Tbsp of oil until it begins to shimmer.
Portion fish and leeks into serving bowls and top with broth. Sprinkle with sichuan peppercorns, dried chiles, cilantro, scallions and pour hot oil over the aromatics. *
Serve with jasmine rice.

NOTES:
Some leeks can be very gritty and dirty, be sure they are clean. If they are super gritty, it’d be best to slice lengthwise and clean it that way. Make sure the leeks are very dry when searing to avoid hot oil splattering.
A good substitute for shaoxing is sherry wine. For non-alcoholic, replace with chicken stock or water.
Garnishes can be placed in a heatproof bowl and hot oil can be poured into that bowl to make it easier.
