Tear the bread into pieces and blitz it to a crumb in a food processor
Heat a drizzle of oil in a large, non-stick pan. Add the sliced leeks to a pan and fry for 3-5 minutes until soft. Remove them from the pan and set aside
Add a little more oil if needed. Tear the pork into small pieces and add to the pan. Fry, stirring regularly for 3-5 minutes until starting to colour and no longer pink
Heat the oven to 200C fan
Return the leeks to the pan with the breadcrumbs and the fresh herbs. Season with salt and pepper and give it a good stir
Add 150ml of boiling water and give it a stir, letting it soak into the breadcrumbs
Add another 150ml of boiling water and stir until everything is combined
Grease an oven proof dish. Tip the mixture into the dish and press it down firmly, particularly around the edges
Brush the top with a little oil
Bake in the oven for 25-30 minutes or until crisp on top and cooked through
