Mix the sauce ingredients together and set aside in the fridge.
Squish the mince evenly to each of the mini tortillas, season with salt and pepper then fry in a pan sprayed with low calorie spray for 3-4 minutes on a medium heat, flip and fry for a further minute or until cooked.
Add the cheese slices to each tortilla, then the lettuce, onions, gherkins and a good drizzle of that beautiful burger sauce and enjoy!
