Didn't have mozzarella so used sliced tasty cheese. Only used a can of crushed and sieved tomato which I found was just enough. Didn't bother with the food processor, though I definitely overcooked the veggies between the saute and bake; chop them finer next time and cook for less time before layering. Also didn't mix the cottage cheese with the veg, just layered on top, so tomato, noodle, veg, cottage cheese, cheese, noodle, tomato, veg cottage cheese, cheese. used one brown onion, one carrot, one eggplant, two courgettes, and spinach for veg
Didn't use harissa, air fried the eggplant, added sesame seeds and substituted the arugula with spinach. Made the hummus in advance so the flavour would develop.
