Didn't work out for me. I think my cottage cheese was too wet - even though I drained it. It burned but was still soft and it melded together with the parchment. I might try with dry cottage cheese
Cakey and soft. 11min bake. They don’t spread much. I reduced sugar to 2/3 cup and used homemade Ube halaya which I also reduced sugar on. Nice flavor! Sweet but Not too sweet. I think if I used store bought halaya it would be too sweet for me. Also, one cookie got rolled in just icing sugar. Not much crinkle effect. The granulated sugar helps keep it from absorbing the icing sugar. Also, I put Ube extract with the eggs and used slightly less flour because it looked like it was going to be too dry. Stored in airtight container. They had the texture of mini donuts by day 3 and were still soft and delicious.
Very easy to make especially if you have a pressure cooker. Cuts the time for boiling down. I will be using this jam to make Ube mochi, cookies, and donuts
