It’s good! The tartness of the apricots are very forward, maybe try the apricot glaze next time. Very much reminds me of an informal cake I would have as a kid for like coffee, or non-holiday dessert.
Loved it! Maybe roast the veggies separate so they roast right and don’t steam. Also, maybe toast the couscous first, and keep an eye on the cooking of that and the pine nuts, there’s a lot of moving parts and it’s easy to lose track
