Halved the recipe, used the smaller of my bread loaf pans, fit perfectly— added ginger date syrup to holes on the top for moisture and then flipped over to have a pretty bottom/top
Came out less gingery than expected. Make sure to mix in ginger with dry ingredients. Also bottom of cookie burnt (not noticeable) but may be good to flip if coating in date sugar pieces. More bready and less chewy than expected when warm - may be because of adding extra eggs and milk. Consider sauteing the spices into the coconut oil and warming up the coconut oil to help mix in the dry ingredients. Consider using part of the oat flour recipe for additional chewy. Cookie when cold was crunchy. Not chewy but still tasty. Cookies needs to be smushed down in center and edges by spoon at 8 min (bake time at recd temp was 14 min total (8 then adding 3 min then 3 min)
