I made them using turbinado (no brown sugar access) and altered slightly by cooking the turbinado with the butter and cinnamon and it worked great. I also mix in the yeast with the dry ingredients and made a well in the center of the flour and combined the almost hot milk and sugar and butter slowly, alternating with the eggs until completely combined then I let it rest for 5 minutes before kneading.
1.5 recipes worked really well! Was expecting center to be thicker but it wasn’t. Just rose more. Used fat skimmed from beef stock (made with short ribs; base for gravy). I always make batter in the morning and let it sit on the counter all day. Bubbles and looks odd by dinner time but it cooks up beautifully.
