Cinco de Mayo, a prominent holiday in Mexico, commemorating the battle of Puebla. Between Mexican and French forces, during the Mexican war of independence. Newly elected President Benito Juarez tasked General Ignacio Zaragoza to march on and fortify the city of Puebla with an out numbered force. It was a decision made in anticipation of a large French force commanded by General Charles de Lorencez preparing to assault the city. On May 5th in the aftermath of an entire day of fighting, General Charles de Lorencez realized he was suffering far more casualties than that of General Zaragoza, and decided to retreat. A major win for Mexican forces. A tip of the hat to those brave men. Tonight my wife and I will enjoy Chicken Enchiladas and Mexican rice from scratch. Rachel Cooks dose an excellent job of explaining Tortillas. To be honest, until I saw her video I was lost. Isabel does a bang up job herself. All four recipes will be located on my profile page. Happy Cinco de Mayo.
