Slice tofu into one inch cubes
Boil tofu in salted water
Toast and grind peppercorns
Stir fry the beef for 4 minutes until crispy
Fry 豆瓣酱 on low heat until oil turns red, about 90 seconds
Add minced, douchi, garlic, ginger, chilli flakes and fry for a few seconds each
Add stock and tofu cubes
Simmer until reduced by about one third, 5-10 minutes. Push tofu back and forth to prevent sticking
Add in soy sauce, liaojiu, MSG, white pepper, toasted sesame oil
Add in cornflour slurry until it's the right thickness.
Add in scallions and cook for 15 seconds
Sprinkle 花椒
